Cilantro thuvayal with eggplant.


This dip can be used for chips or a side for rice or a filling for sandwich like peanut butter. It is easy to prepare as well.

Just boil or steam small Indian eggplant about 6 or 7 of them until tender. Add cilantro 1/2 bunch thoroughly washed into a blender with the egg plant and 2 or 3 tablespoons of lemon, crushed black peeper and salt to taste. Blend it and viola the dip is good to go.

Health benefits, the cilantro prevents cataracts and macular degeneration. It also removes mercury from the body that enters through dental fillings. Eggplant has iron which is good to prevent being anemic. Low glycemic index dip to go with anything you want. Good for people with diabetes too.
