A yummy snack – Vadai

Urid dhal Vadai

Soak this lentil urid dhal (1 1/2 cups) in water, available in Indian store for two hours and drain the water. Grind it or blend it with a 1 1/2 teaspoon of salt and sprinkles of water until it forms a mushy paste as shown in the picture above. Add a couple of chillies, diced onions, cilantro and 1/2 teaspoon black pepper. Wet your hands with water  and make the dough into a flat circle in your palms and poke the center with your finger. Then carefully drop the doughnut shaped vadai dough into the coconut oil and deep fry until it is golden brown. Vadai is ready to eat. About 30 vadai’s are formed for 1 1/2 cups soaked lentils of urid dhal. Urid dhal is rich in calcium and good for the bones. Deep frying is not good so you may want to try baking instead. To indulge, once in a while use organic extra virgin coconut oil to deep fry. Coconut oil is supposed to shrink belly fat when taken in limited quantities.
